Ingredients:
Ingredients
6 tilapia fillets (approx. 6 oz each)
1 ¼ cup Alfredo sauce (see Olive Garden at-home recipe or use store-bought sauce)
½ lb angel hair pasta, cooked according to package directions
Fresh parsley sprigs for garnish
6 lemon wedges
Parmesan Crust
¾ cup Italian breadcrumbs
¾ cup Parmesan cheese, grated
3 Tbsp vegetable oil
Italian vegetables
4 cups zucchini, cut into ¼” slices, then halved
4 cups yellow squash, cut into ¼” slices, then halved
2 cups red bell peppers, cut into strips
1 Tbsp Italian seasoning
1 Tbsp kosher salt
1 Tbsp garlic, chopped
¼ cup extra-virgin olive oil
Directions:
Procedures
PRE-HEAT oven to 450°F.
COMBINE all Parmesan Crust ingredients in a large bowl. Cover and refrigerate until ready to use.
COMBINE all Italian vegetables ingredients in a large bowl. Transfer vegetables to a baking sheet and spread out into a single layer. Set aside.
PLACE tilapia fillets in a shallow non-stick baking pan.
POUR 3 Tbsp Alfredo sauce on top of each fillet. Use bottom of spoon to evenly distribute sauce.
SPRINKLE 1/3 cup of Parmesan Crust mixture onto each fillet and firmly pat over Alfredo sauce.
PLACE pan of tilapia on top oven rack, and place baking sheet with vegetables on center oven rack.
BAKE for approximately 10 minutes, or until internal temperature of fish reaches 150°F. Transfer fish to a serving platter.
BAKE vegetables for additional 5 minutes, or until tender.
TOSS vegetables with cooked, drained pasta and plate with fish.
GARNISH each portion with parsley and a lemon wedge.
